The invented enzyme immobilization process is characterized by the following steps: (a) selection of amphiphilic enzyme for immobilization, (b) preparation of emulsion containing a continuous hydrophobic phase and a dispersed aqueous phase, whereby in the aqueous phase the enzyme and a material suitable as an enzyme carrier during the next step are dissolved, (c) removal of water from the dispersed phase until conversion of this phase to solid particles coated with the enzyme is finished. A suitable aqueous phase is prepared from a raw fermentation medium intended for preparation of lipase, from which biomass was removed and which still contains residues suitable as a carrier. The immobilized enzyme can be used during inter-esterification, removal of acidity or removal of resins from triglyceride oils, where very low consumption of enzyme is achieved. In addition to lipases, phospholipase enzymes are suitable amphiphilic enzymes, too.
