Puffed cereal cakes are prepared by providing a cereal grain impregnated with an organic food ingredient, introducing the grain into a mould, and puffing the cereal in the mould under pressure to form a shaped impregnated cereal cake. The cereal grain may be wheat, millet, buckwheat, barley or corn, but is preferably milled, parboiled rice. The organic food ingredient may be selected from lipids, proteins, carbohydrates, vitamins, emulsifiers, edible dyes, and organic flavourants, and may be applied as an aqueous solution. Specified ingredients are syrup, honey or fruit juice, a sugar such as sucrose, fructose, glucose etc, hydrogenated vegetable oil, or garlic and butter flavouring. The moisture content of the grain may be adjusted before impregnation (by gelatinization with steam), or after impregnation and before puffing. Temperature and time ranges for the impregnation and puffing steps are given. |
