PROBLEM TO BE SOLVED: To obtain a cooked edible meat product such as uncoated deep fry, a pork cutlet or a chicken shish kebab suitable for aged people and having excellent palatability by softening an edible meat in a simple process by treating with smoked solutions (and/or its dried solid material). SOLUTION: An edible meat is softened by treating with a wood vinegar solution obtained by heat-decomposing a broad leaf tree, etc., in a non-oxygen state and cooling the resultant gas, a smoked liquid obtained by purifying the wood vinegar solution by fractional distillation, etc., smoked liquids such as an active smoked liquid obtained by physicochemically ionization treating the smoked liquid and/or its dried solid. Preferably, a composition for softening edible meat is prepared by making the composition include 0.001-50 wt.%, preferably 0.01-30 wt.% of the smoked liquids and/or its dried solid. |
