PROBLEM TO BE SOLVED: To obtain the subject composition good in appearance with a coating, etc., having a crispy texture and capable of producing a food fried in an oil reduced in oil absorption volume by including hemicellulase and/or cellulase. SOLUTION: This composition is obtained by including (A) hemicellulase and/or (B) cellulase. The contents of the ingredients A and B in the component are preferably 0.01-2,000 units based on 100 g of the total grain flour and expressed in terms of the total quantity of the activity. The ingredient A is an enzyme capable of acting on polysaccharides hemicellulose and producing hexosans or pentoses and called a cytase by another name and xylanase hydrolyzing xylan, arabanase hydrolyzing araban and mannase hydrolyzing mannan, etc., are included. The ingredient B is an enzyme capable of accelerating a reaction for hydrolyzing β-1,4-glucoside bonds of cellulose and producing cellobiose. Tempura, fries, etc., are cited as foods fried in an oil to which the composition is applied. |
