摘要 PROBLEM TO BE SOLVED: To provide a spray-dried self-whitening instant coffee readily producible and avoidable formation of a coagulated lump of protein in a drink prepared from the coffee composition. SOLUTION: This self-whitening spray-dried instant coffee has pH 5.5-9.0 and is essentially composed of 30-80 wt.% of water and 20-70 wt.% of a solid component. An aqueous emulsion containing 10-70 wt.% of soluble coffee, 5-60 wt.% of oil, 0-85 wt.% of a filler and 0-10 wt.% of emulsifier without caseinate in a dry weight base is spray-dried to obtain the objective instant coffee.
