PURPOSE: A method to produce chitosan-green tea by being absorbed water soluble chitosan on the surface of the green tea evenly is provided which substitutes bitter taste of green tea using chitosan, reduces nitrate generated in distributing and in cultivating by adding chitosan and contributes to enhance export. CONSTITUTION: A method to produce chitosan-green tea by being absorbed water soluble chitosan on the surface of the green tea evenly is characterized by: steaming 90-99wt.% of a dried green tea powder for 1-2min.; mixing 1-10wt.% of water soluble chitosan with dried green tea powder of steamed followed by coating chitosan by pushing down with a roller in a movable container; and drying until the water content is 10-15wt.%, followed by packing.
