PROBLEM TO BE SOLVED: To provide a heat-processed frozen noodle and manufacturing method capable of demonstrating the peeling action of pullulan to the most and shortening the cooking time, by coating the surface of noodles manufactured by a noodle manufacturing machine or the like with the pullulan. SOLUTION: In order to manufacture this heat-processed frozen noodle 10, after noodles 14 are manufactured and the noodles 14 are boiled in a noodle boiling machine, the noodles 14 are immersed in water and cooled and the water is drained. Then, a noodle ball 23 is formed by subdividing the noodles 14 so as to be a portion for one person and a groove 23A is formed on the noodle ball 23. Then, in the middle of carrying the noodle ball 23 subdivided into the portion for one person by a belt conveyor 24, the pullulan 28 is atomized to the noodle ball 23 through an atomizer 26. Finally, the noodle ball 23 is quickly frozen and then packaged. |
