PURPOSE: A water soluble beta-carotene preparation dispersing in the water is provided which has excellent solubility and stability but no neck-ring phenomenon at the upper part of the container and which can be stored for long period. The method enables that micro emulsion is manufactured by using low speed agitation of general agitator instead of using high speed agitation of high pressure agitator. CONSTITUTION: Beta-carotene preparation comprises lipid phase substance including beta -carotene, edible fats and oils and anti-oxidant, and aqueous phase substance including water in the weight ratio of 1-20 to 99-80, and these components are mixed and agitated to produce the preparation. The lipid phase substance contains 0.5-4 wt.% of beta-carotene, 1-15 wt.% of edible fats and oils and 0.6-10 wt.% of anti-oxidant, and the aqueous phase substance contains 7-30 wt.% of protective colloid, 0.1-1 wt.% of dispersing agent, 5-20 wt.% of sugar and 1-30 wt.% of emulsifying agent.
