PROCESS FOR PRODUCING WATER SOLUBLE ISOFLAVONE

PURPOSE: Provided is a process for producing water soluble isoflavone which is inexpensive and soluble by using micro capsule. CONSTITUTION: The process comprises following the steps of: melting a water soluble material in the water at temperature of 30-80°C, wherein the water soluble material is 1-20w/w of isoflavone amount; preparing a water soluble coating liquid; melting an oil soluble isoflavone by using a 40-95% of ethanol solution; adding an emulsion of 1%-100%(w/w) of isoflavone in the water soluble coating liquid and melted oil soluble isoflavone; mixing the material and removing an ethanol to prepare a mixture liquid; transporting the mixture liquid to pressurized homogeneous machine under the pressure of 30-300Kg/cm¬2 to prepare an emulsion consisted of water soluble coating liquid, emulsifier and isoflavone; drying the emulsion by using a dryer, followed by micro capsulizing the isoflavone by using the water soluble material to prepare a powdered isoflavone. The water soluble material is selected from the group consisting of a glucose, sucrose, maltose, lactose, invert sugar, dextrin, gelatin, modified starch and sodium casein.
