<p>The present invention comprises a system for and method automatically monitoring and improving oil quality, comprising a container of oil (10), such as a vat of frying oil, an inlet (20) for drawing a sample of the oil from the container of oil, a temperature control system (24), a fixed optic sensor (34), and a digital signal processing unit (14).
