摘要 <p>Milk-derived powder for use in the mfr. of chocolate and confectionery (including ice-cream and dessert creams and sauces) is produced by: (i) demineralising whey by at least 50%; (ii) adjusting the pH to 5.8-6.3; (iii) heat-treating the whey to denature at least 60% of the whey proteins; (iv) concentrating the whey by evapn.; (v) inducing crystallisation of lactose in the concentrate; and (vi) spray drying the prod.</p>
