A process for preparation of confectionery products comprises the steps of: a) supplying at least one first confectionery component 16 and at least one second confectionery component 14 to a nip 8 defined by the juxtaposition of a pair of forming elements 1, 2, at least one of the elements having a multiplicity of recesses 4 in one surface thereof, and b) passing the confectionery components through the nip by motion of the elements so as to form the products to the required shape by means of the recesses and to cause the first confectionery component 16 to be fully coated by the second confectionery component 14. The process may include the step of : c) providing an additional coating layer over component 14. The forming elements may be cooled to -10 to -20oC.
