PURPOSE: A fat and oil composition containing highly unsaturated fatty acids and a phospholipid-containing egg yolk lipid and food added the composition thereto are provided which are excellent in flavor and storage stability. CONSTITUTION: A fat and oil composition is prepared by mixing an egg yolk lipid containing from about 25% to 70% by weight of phospholipid with highly unsaturated fatty acids such as fish oil. The fat and oil containing highly unsaturated fatty acids comprises as a component one or more of fatty acids selected from the groups consisting of docosahexanoic acid, arachidonic acid, eicosapentaenoic acid, gamma-linolenic acid and dihomo-gamma-linolenic acid. The phospholipid added can improve the taste of a fat and oil containing highly unsaturated fatty acids and prevent its oxidative deterioration. This composition can be added to dairy products, soft drinks, powder soups, noodles, chocolates, etc.
