摘要 PROBLEM TO BE SOLVED: To prepare a seasoning that increases shape retention by gelling on cooking and shows high stability to heating at high temperature by adding a specific galactoxyloglucan having the reversible thermal response. SOLUTION: The objective thermally stable seasoning is obtained by adding a reversibly thermal responding galactoxyloglucan of which the side-chain galactoses are partially removed, preferably with 20-65% removal, originating from tamarind seed gum.
