摘要 PROBLEM TO BE SOLVED: To effectively solubilize fingerling calcium without impairing delicious food feeling peculiar to fingerlings and moreover while effectively preventing fingerlings from getting out of shape. SOLUTION: This method for solubilizing fingerling calcium in citrus fruit juice is characterized by bringing fingerlings K into contact with citrus fruit juice so as to solubilize calcium included in the fingerlings K in the citrus fruit juice and to make citrus fruit juice including solubilized calcium adhere to the fingerlings K. The method comprises the following steps: (1) feeding fingerlings K in a pressure tank 5; (2) feeding citrus fruit juice in the tank 5 after hermetically sealing the tank 5 and then decompressing the tank 5; (3) pressurizing the tank 5 filled with the citrus fruit juice and the fingerlings k so as to solubilize calcium of the fingerlings K into the citrus fruit juice.
