PROBLEM TO BE SOLVED: To obtain a food raw material capable of being used as a cooked rice with ingredients, cereal, spice for noodles, floating ingredient in soup, topping, etc., by mixing a roast-treated unpolished rice with a dry-treated red koji (Monascus perpreus). SOLUTION: This food raw material is obtained by mixing a roast-treated material of all or several kinds of an unpolished rice, miscellaneous cereals, beans and sesames with a dry-treated red koji, preferably a material obtained by attaching a red koji powder on the surface of swell-treated miscellaneous cereals. |
