PROBLEM TO BE SOLVED: To produce a seaweed product capable of keeping the texture having solid elasticity and feeling resistant to the teeth by allowing a transglutaminase to act on a raw material of the seaweed in a processing step in which an improving effect of the texture is manifested by the action of the enzyme. SOLUTION: A transglutaminase preferably in an amount of 0.1-100 units [based on 1 g protein in a raw material of a seaweed (expressed in terms of dried product)] is allowed to act on the raw material of the seaweed such as Undaria pinnatifida and Endarachne Binghamiae in a processing step in which an improving effect of texture is manifested by the action of the enzyme to provide the objective seaweed product. Preferably, when the seaweed product is the one having the original shape of the seaweed, one or more kinds selected from inorganic salts, organic acids, protein degradation products and thickening polysaccharides are added to an aqueous solution of the transglutaminase in which the raw material of the seaweed is subjected to a dipping treatment so that the transglutaminase may act on the raw material of the seaweed. |
