Bread leavening frame from which the dough can be tipped without rotating the frame

Specifically designed for the production of bread rolls, the frame is a two-part structure with a base (1) and a dough tray frame (6). The two parts are joined by hinged links that carry the dough trays (7). The frames are dimensioned so that they can be stacked in a manner that leaves the lower dough portions free to move. Trays (7) are lined with felt to prevent adhesion of the dough. When the dough is ready for baking the tray is presented to the oven conveyor and frame (6) is moved forward so that the links with the trays (7) rotate about 130 deg to tip the dough onto the conveyor.
