PROBLEM TO BE SOLVED: To obtain a seasoning composition which is stable to phosphatase and has a high nucleic acid content and provide a method for producing the seasoning composition. SOLUTION: This seasoning composition is a complex composition comprising 5'-ribonucleotides and polysaccharides forming gel by a divalent metal ion, and in the infrared absorption spectrum of the composition, absorption strength of peak which appears in 1200-1140 cm-1 wavelengths is 0.83-1.50 when a peak which appears at 1685±8 (cm-1) wavelength is defined as a standard peak and absorbance at this peak is defined as 1. |
