PURPOSE: A production process of a steamed squid is provided which is easy of eating and has sweet and plain taste by sterilizing and heating a less-dried and soft squid vacuum-packed. CONSTITUTION: A production process of a steamed squid comprises: a third-drying the squid by natural wind after drying 2 times by a dryer; selecting a less-dried squid containing moisture of 20% in the third dry process; vacuum-packing the selected squid; steaming and sterilizing the packed squid after soaking it in a boiling water of 98°C for 3-5 mins.; and quick-cooling the steamed squid with a cooling water of 3°C. |
