PROBLEM TO BE SOLVED: To provide a method of controlling incinerator temperature in which it has controllability excellent in rapid response and deterioration, and restricts production of nitrogen oxide, etc. SOLUTION: The invention relates to an incinerator temperature control method for controlling in-furnace temperature based upon an in-furnace combustion state of the incinerator. From predetermined numbers of in-furnace temperatures and produced vapor amounts parameters representative of correspondence thereof are calculated in succession, whereby a change in parameter estimation values (change in refuse quality) is detected (S1 to S4). A vapor object value suitable for the refuse quality is calculated from the estimation values of the parameters (S5). In-furnace temperature is controlled on the basis of a deviation of the vapor object value and the produced vapor amount (S8).
