A dish (8), such as an open chicken is held, in the flat position by spikes (38a,38b) which are mounted on sleeves (36a,36b) which are able to slide on a rotating spit (6). The spit (6) is motor driven and rotates for half a revolution to a position where the long side of the dish is perpendicular to heat source (15), waits for an adjustable time, and then rotates for a further half revolution to repeat the cycle.
