The length of the dwell time spent by the eels in the chilling medium is determined by a factor dependent on the temperature of this medium. A method for killing eels in a humane manner, comprises chilling the eels to a temperature less than -7 degrees C over a given dwell time, until the eels show no more signs of activity. The length of this dwell time is determined by a factor dependent on the temperature of the medium into which the eels have been introduced.
