PROBLEM TO BE SOLVED: To provide a cooking and sterilizing device enabling the voluntary programming of processes. SOLUTION: This cooking and sterilizing device is used for preliminarily programming the data of time, temperature and pressure for each process for raising temperature, heating, cooling, etc., in a sequencer and cooking and sterilizing a target material charged in a tray in a treating tank according to the control of the sequencer. Therein, the cooking and sterilizing device is provided with (A) a process-selecting means for selecting the processes in the order of the processes to be executed, (B) a datum-setting means for setting heating data, etc., in the selected processes, respectively, (C) a memorizing means for memorizing the selected processes and the set data for the processes, and (D) a read-out means for reading out the processes and the data of the processes as sequence data for the sequencer from the memory means C in the order of the executions, when operated. The changes in the execution order of the processes, the addition of processes, etc., can easily be carried out.
