PROBLEM TO BE SOLVED: To obtain the subject food capable of being produced in a large amount, not deteriorated and rotted, having excellent taste, tissue touch and appearance, and useful as a seasoned side dish by immersing a specific fish roe- laminated brown alga in a saturated saline solution to salt the food. SOLUTION: This fish roe-laminated brown alga food is obtained by (i) adding 200-500 pts.wt. of water to 100 pts.wt. of adhesive powder comprising 25-75 wt.% of a transglutaminase and 75-25 wt.% of a thickening agent such as gelatin to prepare an adhesive solution, (ii) mixing 100 pts.wt. of fish roes such as herring roes with 5-35 pts.wt. of the adhesive powder, (iii) coating 100 pts.wt. of a brown alga, such as fresh tangle, having egg-shaped leaf-like portions with 6-30 pts.wt. (water-removed weight) of the adhesive solution, (iv) scattering the fish roe-adhesive mixture prepared in the step ii on the surface of the adhesive-coated brown alga prepared in the step iii and then incubating the mixture, (v) thermally treating the fish roe-laminated brown alga to deactivate the adhesive and the transglutaminase, immersing the treated fish roe-laminated brown alga in a saturated saline solution to restore the fish roes into the spherical shapes, and then salting the product to obtain the fish roe-laminated brown food. |
