PURPOSE: Anticancer activity of natural medicine containing polysaccharides, beta-glucan, such as fungi is increased by roasting, fermentation, and producing an oily agent. In vitro assay method for estimation of anticancer activity of processed fungi is provided. CONSTITUTION: Provided is a method to enhance anticancer activity of natural medicine containing polysaccharides, beta-glucan, especially, Raw state fungi comprising at least one from Agaricus blazei, Grifola frondonsu, Cortinellus shiitake, Tricholoma matsutake, Lyophyllum decastes, or Flammulin a velutipes. The method comprises the following steps of: roasting with infrared radiation in a three days after harvesting; fermenting with microorganism, Koji to improve the anticancer activity thereof; producing an Oily agent coated with oily component from sesami roasted with infrared radiation. The anticancer activity of processed fungi is estimated by in vitro method assaying the production of lipid peroxide from docosahexaenoic acid by irradiation of UV. Addition of processed fungi into the assay system increases the production of lipid peroxide. The production of peroxide is well correlated with the anticancer activity of processed fungi.
