PROBLEM TO BE SOLVED: To provide the subject method and system of simple structure therefor designed to attain uniform temperature of fish paste products as a whole. SOLUTION: This system has such a scheme that, 1st and 2nd water- permeable films 21, 22 are ensured to move under contact respectively with the respective energized surfaces of 1st and 2nd stationary electrodes 11, 12, and fish paste products W are moved between both the electrodes 11, 12 while being driven in a sandwiched condition between the films 21 and 22. When the fish paste products W are energized from an electric source 14 via both the stationary electrodes 11, 12, Joule heat is generated in the products W to effect heating them. By feeding a cooling fluid through a cooling fluid paths 31a, 31b provided respectively on the electrodes 11, 12, the electrodes 11, 12 are cooled to suppress the temperature rise on the surface of the products W, thereby preventing spark generation from the surface thereof. |
