It has been found that, surprisingly, dried or semidried comminuted fish, or parts thereof can, when mixed with vital wheat gluten, produce a combination proteinaceous source which, when heat treated in a variety of methods known in the art, produce tough, coherent, resilient, solid structures. The dried or semidried comminuted fish, or parts thereof, may be milled to a paste, meal or powder by methods known in the art and may be produced from fish species such as herring (Clupea harengus) or Cod (Gahus morhua), Pollack (Pollachius pollachius), Whiting (Merlangius merlangus) et alia. |
