A process and assembly automatically and mechanically sorts meat and meat products, especially meat of variable selected standards. The meat is first diced (1). The diced pieces are then transferred through an interface (2) into a gravity selector (3) which sub-divides the meat into two or more fractions. The diced meat is separated within a rising flow of air or air enriched with an inert gas.
