FIELD: biotechnology, dairy industry. SUBSTANCE: ferment is prepared by culturing the symbiosis of mesophilic, thermophilic, lactic acid bacteria, acetic acid bacteria and by addition of cereals. The source of microorganisms symbiosis is the natural buttermilk microflora obtained in butter production by any method and rye grains are used as cereals source. Culturing is carried out at 19-21 C at stirring and shaking in each 4 h for 4-6 days. Additional feeding is carried out with defatted milk or buttermilk. At acidity 270-300 T rye grains are added to the mixture and culturing is continued under the same condition up to ferment acidity 300-350 T. Obtained consortium shows high resistance to contamination and ability to population autoregulation. Invention can be used for biopreserving waste production and its the following use as mixed feed.
