PROBLEM TO BE SOLVED: To produce a pregelatinized grain having the texture, viscosity and digestibility of particles after cooking without any change thereof from those of usual grain in a short time and improve a working environment. SOLUTION: This pregelatinized grain is produced by including 20-30% of water in a grain, irradiating the resultant hydrous grain with infrared rays containing infrared rays in a wavelength region of 1.5-30 μm and the lower limit wavelength thereof within the range of 1.5-2.5 μm and thereby simultaneously carrying out pregelatinizing and drying. |
