PROBLEM TO BE SOLVED: To provide a method for cooking a daily dish capable of preventing the deterioration of taste or proliferation of bacteria without requiring heavy energy consumption. SOLUTION: A food material is primarily cooked at >=70 deg.C heating temperature to provide a primary food comprising a daily dish. The resultant primary food is then converted into a secondary food by secondary cooking for hermetically sealing the primary food in a container during the keeping of the primary food at >=65 deg.C temperature, decompressing the interior of the container to a lower pressure than atmospheric pressure and annealing the primary food to 3-6 deg.C temperature under the reduced pressure. The prepared secondary food is subsequently stored to the time of setting the table while being maintained at a temperature within the range of 3-6 deg.C under the reduced pressure. |
