PROBLEM TO BE SOLVED: To prepare a starch paste excellent in freeze resistance, storage stability or the like without requiring a special equipment by adding an alkali to starch dispersed in water so as for the starch to be gelatinized and then by neutralizing it with a neutralizing agent in the presence of a specific compound. SOLUTION: This starch paste is prepared by adding an alkali to starch dispersed in water so as for the starch to be gelatinized and then by neutralizing it with a neutralizing agent in the presence of a propylenecarbonate of the formula. The starch is e.g. rice starch, wheat starch, corn starch, potato starch, tapioca starch, sweet potato starch or the like and may be modified starch produced by chemically treating various kinds of natural starch. The alkali is pref. caustic soda having 10-50% concentration or the like. The neutralizing agent is e.g. hydrochloric acid, sulfuric acid, acetic acid, citric acid, a compound assuming acidic in an aqueous solution, or the like. The content of the propylenecarbonate is pref. over 0.05 wt.% and below 37.5 wt.%.
