PROBLEM TO BE SOLVED: To obtain an antiinflammatory agent showing a calm antiinflammatory action, hardly causing an adverse effect even in long-term administration or a large amount of administration. SOLUTION: This antiinflammatory agent comprises a dried substance of an extract of black vinegar or powder of residue obtained after removal of black vinegar from unrefined black vinegar with an organic solvent. An ordinary method for producing black vinegar comprises feeding malted rice, steamed rice and water to brewing earthenware pots arranged in the open air, advancing saccharification, alcohol fermentation and acetic acid fermentation in the same earthenware pots by the force of solar energy, producing an unrefined black vinegar having a characteristic taste and various useful components through a long aging period, filtering the unrefined black vinegar to give black vinegar and reside powder as powder of unrefined black vinegar. Preferably ethyl acetate or methanol is used as the organic solvent. Cytoplasm phospholipase A2 inhibitory activity and O2- production inhibitory activity which black vinegar or powder from residue of unrefined vinegar has are noticed and are used as indexes of antiinflammatory activity.
