PROBLEM TO BE SOLVED: To produce an anka containing a large amount of monacolin K having lowering actions on cholesterol and useful for producing an chiew, etc., by adding an embryo to a raw material for a koji, maintaining the moisture content within a prescribed range and carrying out the culturing under specific conditions. SOLUTION: Preferably 3-20 wt.% of an embryo such as a wheat embryo or a rice embryo is added to a raw material for a koji such as polished rice and culturing is carried out by using a strain, e.g. Monascus pilosus IFO4520, maintaining the moisture content thereof at 30-45% and regulating the culture temperature to <=27 deg.C for a period of >=3 days in the latter period of koji preparation to provide an anka. Thereby, the anka is preferably obtained or preferably used as a raw material to produce a processed material. |
