TREHALOSE SYNTHASE PROTEIN AND GENE, AND PROCESS FOR PRODUCING TREHALOSE USING THE SAME

PURPOSE: A trehalose synthase protein, its gene and a method for producing trehalose are provided, thereby the trehalose can be mass produced from maltose by using E.coli transformants. CONSTITUTION: The trehalose synthase gene is isolated from Pseudomonas stutzeri CJ38 (KFCC 10985). A recombinant plasmid pCJ122 producing the trehalose synthase is prepared by inserting 2.5kb BamHI-BgIII fragment of plasmid pCJ104 into plasmid pUC18. The method for producing trehalose comprises the steps of: transforming E. coli with the recombinant plasmid pCJ122; incubating the recombinant E. coli; collecting and crashing the cells of the recombinant E. coli; centrifuging the crashed cells and collecting the supernatant; and reacting the supernatant with maltose solution, or purifying the supernatant to separate pure trehalose synthase followed by treating maltose solution with the purified trehalose synthase to convert maltose into trehalose.
