PURPOSE: An oil recovery system controlling method is provided to minimize environmental pollution by removing oil without chemical treatment and to efficiently use energy by recovering oil. CONSTITUTION: A controlling method of an oil recovery system comprises a first process detecting oil level(Lt) in turning on a driving key; a second process deciding whether the oil level is over established value(L0); a third process waiting for a specific time after stopping a first pump while the oil level is over the established value; a forth process deciding whether position of a moving plate(At) is over an established value(A1); a fifth process closing a second valve while the position of the moving plate is under the established value; a sixth process discriminating whether the oil level is under the established value after actuating a second pump in opening the first valve; a seventh process deciding whether the driving key is turned off after stopping the second pump and closing the first valve while the oil level is under the established value; and an eighth process completing after turning off the driving key.
