In the present invention there is disclosed an extrusion process of gelatin hydrolyzate and gelatin per se, optionally in a mixture with other nutritive substances by extrusion in the presence of an auxiliary medium. The invented process is characterized in that it is carried out with admixture of a solution of water and an aliphatic alcohol having branched as well as straight chain containing 1 to 6 carbon atoms with concentration ranging from 50 to 99 percent by weight of alcohol in water, whereby there is preferably used the ratio of 70 to 97 percent by weight alcohol with 3 to 30 percent by weight of water. The solution is first mixed with 5 to 20 percent by weight gelatin mixture with vitamin and flavoring components and subsequently it is mixed with the remaining 95 to 80 percent by weight of dry mixture and then it is treated in an extruding machine.
