PROBLEM TO BE SOLVED: To obtain a stable food containing sterol and stanol by including a specific amount of sterol ester, an emulsifying agent or hydrocolloid and a fat crystal inhibitor. SOLUTION: This stable food comprises sterol and stanol and has sterol ester in an amount capable of decreasing cholesterol, an emulsifying agent or hydrocholloid and a fat crystal inhibitor. The stable food can be prepared by preparing water current, a food grade acceptable oil, a stanol ester, a fat crystal inhibitor and an emulsifying agent, mixing these materials, heating the mixture at about 100-150 deg.F to prepare heated oil and adding the heated oil to the water stream. |
