PROBLEM TO BE SOLVED: To obtain a bean curd-processed food having a soft and smooth eat feeling by using a dough consisting of tofu as a main component and provide a method for producing the same. SOLUTION: This method for producing a processed tofu food is to heat a dough consisting of tofu as a main component in an oil and heat with a wet heat in an extent of solidifying its surface. The method has an extension such as a method of using a soybean protein paste instead of tofu, using a mixture of the bean curd with the soybean protein paste, using such a dough containing ingredients or the like. Thereby, it is possible to contribute to consumers by providing a more healthy food having a soft and smooth eat feeling as compared with the conventional processed tofu food such as Ganmodoki (a fried pressed tofu containing vegetables) or Atsuage (a thick fried pressed tofu), and also if desired, capable of containing many kinds of ingredients in a high content. |
