<p>A process for the preparation of sorbic acid or salts thereof by decomposing a polyesther prepared from ketene and crotonaldehyde, which comprises the step of subjecting a solution of sorbic acid or a salt thereof as formed by the decomposition to treatment with a chemical-activated carbon. This treatment is conducted under the conditions of, e.g., pH 5.8-7.5 and 30-80 °C. This process permits efficient removal of colored substances, thus giving high-quality sorbic acid excellent in hue easily and in a high yield.</p> |
