<p>A novel histamine dehydrogenase which is usable in quantitating histamine performed over a broad scope including the fields of food industry, marine product industry, food sanitation, medical care and analytical instrument industry; a method for accurately quantitating histamine alone by a simple procedure with the use of the above histamine dehydrogenase neither carrying out any pretreatment for preliminarily eliminating impurities comprising biological amines (cadaverine, putrescine, etc.) nor adding stabilizers; and a quantification reagent therefor.</p> |
