PROBLEM TO BE SOLVED: To obtain an optically activeα-hydroxyketone in high yield. SOLUTION: An optically activeα-hydroxyketone expressed by the formula: R1-CH(OH)-CO-CH3 (R1 is a 1-10C alkyl, phenyl, furyl, thiophenyl, substituted phenyl or naphthyl) is produced by culturing a microorganism capable of producing pyruvic acid and adding an aldehyde expressed by the formula: R1-CHO R1 is a 1-10C alkyl, phenyl, furyl, thiophenyl, substituted phenyl or naphthyl) to the culture liquid. |
