PROBLEM TO BE SOLVED: To provide soybean-fermented foods and soybean fermented tea capable of increasing nutritive values and contents of various components and being efficiently absorbed inside the body. SOLUTION: The soybean food and the soybean tea are finished by preparing a globular mass of soybeans by bringing soybeans after impregnation and/or steaming to form a dumpling-like shape, inoculating Aspergillus oryzae, fermenting to obtain a fermented soybean mass and finally roasting the obtained fermented soybean mass. |
