PROBLEM TO BE SOLVED: To obtain an oil and fat-emulsified composition capable of enhancing and maintaining the original taste of just baked bread by dissolving yeast in a mixture containing an oil and fat, a peptide-containing seasoning, a saccharide and water and fermenting the mixture by adding in producing bread. SOLUTION: To a mixture containing preferably 15-80 wt.% of (A) an oil and fat such as milk fat or the like, preferably 0.1-20 wt.% (as an amount in terms of nitrogen) of (B) a peptide-containing seasoning such as a vegetable protein-decomposed seasoning or the like, 1-20 wt.% of (C) a saccharide such as sucrose and (D) water, further preferably 0.1-50 wt.% of (E) a solid component of milk such as raw milk or the like, 0.5-5 wt.% of a yeast such as raw yeast or the like is dissolved and fermented. The oil and fat-emulsified composition is obtained by adding the oil and fat the peptide-containing seasoning and the solid component of milk to a mixture obtained by adding the yeast to the saccharide and fermenting the mixture, or bringing the said mixture to contain the milk solid, successively adding the yeast and fermenting the mixture.
