PROBLEM TO BE SOLVED: To provide a powdery or granular food additive that can give good flavor and taste with excellent storage stability. SOLUTION: The objective powdery or granular additive is prepared by mixing and kneading a protein powder having >=15% protein denaturation degree and a phospholipid where the weight ratio of the protein powder to the phospholipid is 0.5/1-100/1 and the moisture content of the additive is <=15 wt.%.
