PROBLEM TO BE SOLVED: To obtain a miso soup packed in a sealed container, having being thermally sterilized, excellently maintaining a characteristic taste of miso soup, hardly causing deterioration in taste with the lapse of time after production, having high quality stability. SOLUTION: Raw material comprising a miso, an acid fermented milk, optionally an ingredient, a seasoning, etc., are mixed with warm water and stirred to give a miso soup. The miso soup is thermally sterilized, packed into a container and sealed or packed into the container, sealed and thermally sterilized to give a miso soup packed in the sealed container. Preferably the amount of the acid fermented milk added is 5-100 wt.% based on 100 pts.wt. of the miso. A solid content is the miso soup is finely ground by a homogenizer, etc., so that the miso soup can be drunk as it is like a beverage. |
