A machine for preparing espresso coffee is proposed which has a brewing filter (10) which can be filled with ground coffee and which comprises a sieve (11' 12) with openings (13) of defined cross-sections in order to retain the ground coffee during brewing. Devices for changing the cross-sections of the openings (13) are provided.
