A dehydrated foodstuff having a rapid reconstitution time in boiling water contains 8 to 75% of sodium chloride and 1 to 10% moisture, both based on the total weight of the dehydrated foodstuff. The foodstuff is cooked either before or after impregnation with sodium chloride and then dried by conventional methods, such as air drying or freeze drying. Foodstuffs exemplified are leeks, carrots, cabbage, cauliflower, green beans, green peppers, peas, onions, potato, beef, and chicken. In one example salted onions containing additionally monosodium glutamate are, after partial dehydration, finally dried by toasting. The products of the invention may be incorporated in soup mixes. |
