The invention concerns a method for continuously cooling products in a chamber (10) wherein in the products (5) are circulated along a path connecting an intake (40) to an outlet (42) of said chamber. The method consists in causing said products to be substantially vertically circulated over at least part (22, 23) of their travel. The injection of cryogenic fluid and atmosphere stirring in the chamber are time-controlled independently by means of ventilating units for controlled cooling of the products (5) in the chamber (10).
